  • 1/2 cup walnuts, chopped

  • 1 tsp ground cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste


Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Place the squash halves cut-side down on a baking sheet and roast for 30–40 minutes, or until tender.

  3. In a skillet, sauté onions and garlic until fragrant. Add spinach, lentils, quinoa, cranberries, walnuts, and spices. Stir until well combined.

  4. Flip the roasted squash halves and scoop out some flesh to create a cavity. Mix the scooped flesh into the lentil filling.

  5. Fill each squash half with the mixture. Bake for another 15 minutes.


Sides


Maple-Roasted Brussels Sprouts and Sweet Potatoes



Ingredients:

  • 2 cups Brussels sprouts, halved

  • 2 cups sweet potatoes, cubed

  • 2 tbsp olive oil

  • 2 tbsp maple syrup

  • 1 tsp smoked paprika

  • Salt and pepper to taste


Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Toss Brussels sprouts and sweet potatoes with olive oil, maple syrup, paprika, salt, and pepper.

  3. Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway.


Creamy Cauliflower Mash



Ingredients:

  • 1 large head of cauliflower, chopped

  • 1/4 cup unsweetened almond milk

  • 2 tbsp nutritional yeast

  • 1 clove garlic, minced

  • Salt and pepper to taste


Instructions:

  1. Steam cauliflower until tender.

  2. Blend cauliflower with almond milk, nutritional yeast, garlic, salt, and pepper until smooth.




Desserts


Vegan Pumpkin Pie


Ingredients:

  • 1 pre-made whole-grain pie crust

  • 1 can (15 oz) pumpkin puree

  • 1/2 cup unsweetened almond milk

  • 1/3 cup maple syrup

  • 1/4 cup cornstarch

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp ground cloves


Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Blend all ingredients until smooth.

  3. Pour into the pie crust and bake for 50–60 minutes, or until set. Cool before serving.



Dark Chocolate Avocado Mousse



Ingredients:

  • 2 ripe avocados

  • 1/3 cup unsweetened cocoa powder

  • 1/4 cup maple syrup

  • 1/4 cup almond milk

  • 1 tsp vanilla extract


Instructions:

  1. Blend all ingredients until smooth and creamy.

  2. Chill in the refrigerator for at least 1 hour before serving.
